Taco Cups 1

I feel like in the Fall it is one event after another. It is a cocktail party, happy hour, tailgate, parents weekend, pot luck…. I am NOT complaining! I feel very lucky and blessed to be included in so many gatherings and hope I am always invited so don’t forget about me!!! But, it does it get hard to think of things to bring that is not a bottle of wine or a candle.  Yes every host loves a bottle of wine, but when you say I am bringing a home made appetizer to a football watching party that is not chips and dip they are over the moon happy.  I promise! These Taco Cups are so delicious and filling and your host, guests, family will love them. They are, of course, easy and quick-like 25 minutes from start to finish??  Hell they are tacos in party form.. how hard can that be??

I used beef because I have been getting the Butcher Box and it has ground beef in the box, but you can absolutely use ground turkey. Or you could make this vegetarian and use black beans and quinoa instead of the meat, but why? You can also use the packaged taco seasoning, but if you have time make your own and just keep it in your pantry.  It lasts about 6 months and it tastes so much better! Taco Cups

A taco in party form! Easy to make and easy to eat at a party or tailgate!

Servings 12

Ingredients

  • 1 lb ground beef or turkey
  • 1 Tablespoon olive oil
  • 3 Tablespoons or 1 package Taco Seasoning
  • 1 can Rotel Tomatoes and Diced Green Chilis
  • 1/3 cup water
  • 24 wonton wrappers
  • 1-1 1/2 cup shredded cheddar cheese, Monterey Jack cheese or Pepper Jack cheese
  • Cooking Spray
  • shredded lettuce, sour cream, chopped green onions for garnish

Instructions

  1. Preheat oven to 350 degrees.

  2. In a skillet heat oil over medium high heat.  Brown meat until cooked through.  Drain fat. 

  3. Add Rotel, taco seasoning and water.  Allow to cook for about 5 minutes or until the water has evaporated. Turn heat off and allow to cool for about 10 minutes. 

  4. Spray muffin tin with cooking spray. 

  5. Place one wonton wrapper in each cup. Sprinkle about a tablespoon of cheese on top. Layer a second wonton wrapper on top of cheese and press down. Scoop a heaping tablespoon of meat mixture on top of wonton wrapper. Sprinkle a bit of cheese on top of meat. Repeat with all cups. 

  6. Lightly spray the tops of the wonton wrappers with cooking spray.  I hold my muffin pan over my kitchen sink so I do not spray all over my kitchen floor or counters. 

  7. Place in oven for 10-12 minutes or until golden and crispy. Top with shredded lettuce, extra cheese, sour cream, green onions, jalapeños... 

Recipe Notes

If you cannot find Rotel Tomatoes and Green Chilis you can use 1 can fire roasted tomatoes, drained, with 1- 4oz can of green chilies or 1-4oz can of diced jalapenos.
