Well…. 2020 is about to come to an end, THANK GOD! I know I am not the only one that is ready to put this year behind me. Yes, I know when the clock strikes midnight all our problems will not disappear, but at least we can start fresh with 2021!

With a lot of people staying home and not entertaining this year it makes for a very strange New Year’s Eve, but we still need to celebrate. Celebrate that we made it through 2020, celebrate that we are here to see another year, celebrate life! So try and make it a special night even if you are staying at home. Break out the champagne flutes, the good champagne and toast to a healthy and happy new year ahead.

One way to make the evening seem “fancy” is to make a few fun appetizers to munch on while you watch the ball drop. This one, Caviar Potato Chips is EASY, EASY and will make you feel very “festive”. It pairs perfectly with a nice cold bottle of champagne.

You guys know I LOVE Champagne and I do have my favorites such as Krug, Pol Roger, Ruinart…. but I also love the lower end brands such as Gruet. Gruet is grown in New Mexico and is FABULOUS sparkling wine for $15 a bottle. So, if you are one of those people that just likes champagne but does not want to shell out the big bucks for true connoisseur champagnes then please check out Gruet-you can find it in most grocery stores (if your state allows that).

Now, onto the appetizer, Caviar Potato Chips…. this could not be an easier way to make guests think, wow! You are going to buy a back of regular potato chips, a small jar of caviar (you can buy inexpensive caviar at the grocery store next to the canned tuna), creme fraiche or sour cream, dill or chives. You can absolutely buy the high end caviar if you are a connoisseur of caviar, but for most of us the stuff in the jar will work just fine for $8. Serve these little bites are your fanciest serving tray and Cheers!

Caviar Potato Chips

Crunchy potato chips with creamy creme fraiche and salty caviar make the perfect little bite

Servings 16

Ingredients

  • 1 bag Potato chips (Utz, Kettle, Lay's)
  • 1/4 cup creme fraiche or sour cream
  • 1 2oz jar lumpfish caviar such as Romanoff
  • Fresh dill or chives, chopped

Instructions

  1. Sort through a bag of potato chips for flat chips.

  2. Arrange chips on a serving tray.

  3. Using a small spoon place a small dollop of crème fraiche on each chip.

  4. Top with a spoonful of Romanoff Black Lumpfish Caviar.

  5. Sprinkle with dill chopped chives.
