The kiddos are out of school today and shockingly we have nothing going on!  I almost don’t know what to do with all three kids at home.  Little one got up about 7:30am so that means that I was up at 7:30AM!, but the other two are still asleep and it’s 10:15am. Yay Lord!  I truly never thought we would get to the day where the kids slept past 5 o’clock.  I have to say it is heavenly.  There is nothing better than having all your chickens in the house and yet have it quiet.  So since I was up at the crack of dawn with my youngest and the two dogs-Lord have mercy on my soul-that is another topic for another day.  But, anyway we got another dog (picture me opening a bottle of wine and not using a glass) so I was up with Jack and the dogs and he asked me to make him breakfast. 
I have not been to the store in a few days so I used what I had in the fridge and made breakfast burritos. I always have tortillas, eggs, cheese and sausage or bacon in the fridge. I found some chopped bell peppers in the freezer and a couple wimpy looking green onions laying around so voilá I had the makings for burritos.  
Here is my “recipe”.  I don’t like to use potatoes in my burritos, but many people do so use what you like. If you like it spicy throw in a chopped jalapeño or pickled jalapeños.  If you don’t have sausage or bacon then use ham or turkey. Put broccoli or zucchini in your burritos if you like.  Really anything goes!  
Oh and this is a great thing to make and wrap in parchment and microwave on mornings when you don’t have time to make breakfast for all the monsters.  
    

 

Breakfast Burritos

Makes 8 Burritos

8 large tortillas
1 lb. breakfast sausage (or 1lb. of bacon)
8 large eggs
1 cup chopped bell peppers (red, yellow, green... you can buy frozen chopped)
1/2 cup chopped onion
1 1/2 cup shredded cheddar cheese (or pepper jack cheese or monterey jack)
Salt and Pepper
Salsa

In a large skillet brown sausage and break into little bits.  Add peppers and onion.  

In a medium bowl, whisk eggs until fluffy.  Season with salt and pepper to taste.

Add eggs to sausage/pepper mixture.  Stir until eggs are cooked through and peppers are softened.  Add cheese and let melt.  

If eating the burritos right now, warm tortillas in microwave.  Place about 1/2 cup of sausage mixture in middle of tortilla and wrap up.  Serve with salsa.  

If making these in advance then there is no need to warm tortillas.  Just wrap them up in parchment paper or foil and keep in fridge until ready to eat.
