Yogurt parfaits are my go to breakfast.  I do not love eggs so I eat a lot of yogurt to get my day going and when the berries are in season I try to mix in as many as I can.  Adding a handful of granola makes it feel like a full breakfast, kinda:) 

 
For these parfaits I used store bought granola because I just didn’t have the time to make my own.  I really like Kind Granola brand, but, if you want to make your own here is my recipe for delicious homemade granola.  
 
You can make these ahead of time, but I would only make them about 30 minutes to an hour ahead or the granola gets soggy.  They are easy enough to make at the last minute or you can just put all the ingredients in bowls and let your guests make their own.  Make those guests work for their meal!!!
 
Even if you are not hosting Easter this is a great “recipe” to have in your back pocket for future brunches or just for Tuesday morning breakfast.  

 

Strawberry Granola Yogurt Parfaits

A super easy addition to any brunch or a perfect start to the day. Use whatever fresh fruit you can find!

Servings 6

Ingredients

  • 1 large container honey vanilla Greek yogurt 
  • 1 pint strawberries, chopped into small pieces
  • 2-3 Cups Granola
  • Find 6 glass cups, jars, coffee mugs... 

Instructions

  1. Layer ingredients starting with yogurt, strawberries and then granola.  Repeat layers until the glasses are full.

  2. Store covered in plastic wrap in the refrigerator until ready to serve.

Recipe Notes

I would not make these too far in advance or the granola will turn soggy.  30 minutes to an hour is plenty of make ahead time.
