Bring an appetizer! I know you hear that all the time when you are invited to a party or get together, but, what can you bring that is fun, different and healthy? Well, not kale healthy, but semi healthy? Make these Oven Fried Pickles, they are DELICIOUS! They are easy and your guests or family will devour them. I made these this weekend while the boys, and I, were watching the National Lacrosse semi-finals and they ate the whole batch in 5 minutes. Yes, lax is a HUGE sport in our family! My husband and his 3 brothers all played in college and my 3 boys have played since they were in 1st grade and I love watching it! A quick shout out to my friend Megan‘s son, Cade who plays for UVA and who made it to the final four!! Ok, back to the amazing oven fried pickles! I promise you will not notice that they are not fried. They are crunchy, salty, tangy and are the perfect thing to munch on while watching tv or to take to a casual party. I serve them with my homemade ranch dressing, but by all means buy that Hidden Valley stuff and call it a day!
The only trick to this recipe is to make sure that your pickles are dry before you dredge them in flour. Ok, don’t be put off by dredge-it is very simple! Get three pie plates or regular dinner plates and in one pour about 1/2 cup flour into it. In the second plate crack two eggs and scramble with a fork. And, in the third mix the panko bread crumbs (flaky, crunchy Japanese bread crumbs you can find in ANY store) with dill, melted butter and garlic powder. Easy, right?
Take your paper towel dried pickle slices and dump them, in batches, onto the flour plate. Make sure they are coated in flour, but only lightly. Then dump them onto the egg plate and make sure they are coated in egg. Then dump them onto the panko plate mixture and make sure they are really coated!! Then place them on a parchment lined baking sheet-you can use foil, but I like parchment paper. Then bake them in the oven for 15-17 minutes or until crunchy. Then SERVE, YUM!
Serve with Ranch Dressing

Oven Fried Pickles
You will not notice these are baked in the oven and not fried, I promise! They are crunchy, salty, tangy and delicious to munch on while watching sports or to take to a casual party.
Ingredients
- 1 cup dill pickle slices (not spears)
- 1 cup panko bread crumbs
- 1/4 cup fresh dill, chopped
- 2 Tablespoons melted butter
- 1/2 teaspoons garlic powder
- 1/2 teaspoon Kosher salt
- 1/2 cup flour
- 2 large eggs
- Ranch Dressing for dipping-recipe linked
Instructions

Preheat oven to 450 degrees. Line a baking sheet with parchment paper.

You will use 3 shallow bowls or plates for dredging. In first bowl, combine panko, dill, melted butter, garlic powder and salt. Set aside.

In second bowl, whisk eggs, set aside.

In third bowl pour flour. Set aside.

Dry pickle slices using a paper towel. In batches place the pickles in the flour-coating lightly, then place the flour coated slices in the egg then place the slices in the panko mixture. Place coated slices in a single layer on baking sheet.

Bake for 15-17 minutes or until golden brown and crunchy.

Serve with ranch dressing.

If you want to add a kick add 1/8-1/4 teaspoons cayenne pepper to panko bread mixture.

OM Goodness! Incredible! Not greasy like regular fried pickles. I forgot the dill, but it didn’t matter. Used garlic salt with the Panko. Everyone loved and want me to make again!
