Ok I am not going to try and spin this recipe into something healthy because its not! It is not healthy AT ALL, but it is delicious and sometimes we just need delicious to the damn family will eat it! And I promise your family will love this.  I did another test run last night with this Chicken Cordon Bleu Lasagna with 7 teenage boys and my husband and they all loved it and asked for seconds. That is a win in my book!

Now, like I said this is rich and filling so I serve a big side salad with a very vinegary dressing. I did try to cut the calories as much as I could by using 2% milk and 1/3 fat cream cheese, but lets face it its still not a kale salad, but oh well every now and then we just want delicious!

This recipe is not hard or complicated but it does take a little bit of time so just know going in that it is not going to be on the table in 30 minutes.  This is a great make ahead recipe. Make it on the weekend (keep it uncooked in the fridge) and have it ready to go for the night you want it.  Just take it out of the fridge about 20 minute before you are ready to cook it just to take the chill off and increase the cook time by about 10 minutes.

Melted Butter with garlic

Slowly add the flour and whisk in to create a smooth roux

Add Cream Cheese and whisk until a smooth sauce forms

Season with salt, pepper and onion powder

Lay the cooked noodles on a foil lined baking sheet that has been sprayed with cooking spray to prevent sticking.  You can layer the noodles (so you don’t have to dirty another pan), but just spray the noodles so they don’t stick together.

Spread a thin layer of sauce on the bottom of a 9’x13″ baking dish that has been sprayed with cooking spray then start the layering process.

Sprinkle the ham and chicken on the noodles.

This is the ham I used. If you cannot find cubed ham and no one is at the deli counter to help you, you can always use just deli meat slices, cut into strips.

I can never find shredded Swiss so I just use slices and alternate the pattern throughout the layers so every bite gets cheese!

Three layers then top with mozzarella and parsley for color. Wrap in foil and bake 45 minutes or until bubbly!

Chicken Cordon Bleu Lasagna

Made with ham, chicken, Swiss and mozzarella cheeses this Chicken Cordon Bleu lasagna is a creamy and delicious meal that will become a family favorite. 

Servings 6

Ingredients

  • 12 lasagna noodles, cooked 2 minutes less than package directions
  • 4 1/2 cups cooked and chopped chicken (about 1 large rotisserie or 2 breasts)
  • 1 1/2 cups cooked and diced ham (you can use deli ham as well)
  • 3 cups Swiss cheese (shredded or sliced)
  • 1 cup mozzarella cheese, shredded
  • 16 oz (2 pkg) 1/3 less fat cream cheese
  • 1 stick butter
  • 4 garlic cloves, minced
  • 1/2 cup flour
  • 4 cups 2% milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • Parsley, chopped for garnish

Instructions

  1. Preheat oven to 350 degrees. 

  2. Cook lasagna noodles 2 minutes less than package directions say.  Once they are cooked, drain in a colander and place on a foil line baking sheet that has been sprayed with cooking spray so they do not stick.  You can layer the noodles as long as you spray each layer with spray. 

Sauce

  1. In a large sauce pot heat butter over medium  until melted.

  2. Add garlic and allow to cook for about 1 minute. 

  3. Gradually whisk in flour to butter.  Cook for 1 minute whisking all the lumps out. 

  4. Gradually add the milk whisking as you go. 

  5. Add onion powder, salt and pepper.  Add cream cheese and stir until all the cheese is melted, about 3 minutes. Taste for salt and pepper. 

Assembly

  1. Spray a 9x13" baking sheet with cooking spray. 

  2. Scoop 1/2 cup sauce into bottom of baking dish.  Spread out evenly. 

  3. Place 3 lasagna noodles on the bottom of the pan

  4. Layer 1/3 of chicken over the noodles.

  5. Next layer 1/3 ham over chicken

  6. Pour 1/3 sauce over chicken and ham

  7. Sprinkle 1/3 of Swiss cheese over sauce

  8. Repeat two more times. Noodles, chicken, ham, sauce, cheese

  9. Cover with your remaining 3 sheets of pasta

  10. Sprinkle mozzarella cheese on top and parsley

  11. Cover with foil and bake for 45 minutes or until bubbly

  12. Let sit 15 minutes before serving
