I hosted a cocktail party a few weeks back and served this appetizer.  They were gone in a flash. One of my friends even dribbled some of the oil on her gorgeous outfit, but said it was worth it because those things were amazing.  Now that is a compliment, whether she was just drunk and being nice or was serious.  I take all compliments about my food to heart.  See that is a lesson in serving your guests lots of cocktails so they will love anything you put in front of them:)
But seriously, aren’t cocktail parties so fun?  There is no pressure to serve dinner and typically people help out the hostess and bring delicious dips or wine.  I feel like we, as a generation, have lost the art of casual get togethers.  It’s kinda nice to gather at someone’s house and just talk, no phones, just talking and catching up.  We have a group of friends that gets together for game night every now and then. It’s relaxed, casual, silly and fun.  

This is a great appetizer to bring to a party or serve at a party you are hosting.  It takes about 10 minutes, seriously!  

 

Caprese Skewers

Makes about 48 Skewers

1 tub (about 24) herb marinated bocconcini (small mozzarella balls), cut in half
1 tub of multi-colored cherry tomatoes, cut in half
1 bunch basil, leaves torn in half
48 fancy toothpicks

Find a pretty tray, white works really well with the red, white and green of the caprese.

Skewer the mozzarella, a piece of basil and a tomato half.  Make sure the tomato is skewered so that the flat side is able to lay flat on the tray. 

Continue until all the bocconcini, tomato and basil are gone or you run out of space on the serving tray.

Serve and act like it took so much talent to pull off this amazing appetizer.  

** If you can't find herb marinated bocconcini then just use plain bocconcini and drizzle aged balsamic over the skewers before serving.  Don't kill yourself searching for marinated bocconcini-life is too short!
