Baked Chicken Parm 9

Well the school year has started and that means crazy!  Although this summer was absolutely insane! I feel like we didn’t have one day of just “nothing to do” and it was gone so quickly. I still have one more week with my older two before they go back to school and I am savoring every minute!  One way I do that is by having family dinner and making really good food! This recipe for Baked Chicken Parmesan was a huge hit with all my boys. It is quick, easy and healthy-all requirements for a week night meal.

One way I make this healthy is by baking the chicken and not frying it like traditional chicken Parmesan. Don’t worry it is still crunchy and juicy, but with just less calories. Another way I make this healthy is to serve it over zucchini noodles or Banza pasta that is made from chickpeas and has a TON of protein in each serving. My boys shockingly like both options! But, if I don’t have either in my house then I will serve over regular pasta and that is always delicious:) I’m not going to the grocery store again for one item!!!  Hell I will serve it over rice to avoid going to the store again:)

Baked Chicken Parmesan

A healthy version of chicken parmesan that is crispy, crunchy, cheesy and oh so good!  Serve over zucchini noodles for a low carb meal. 

Servings 6

Ingredients

  • 3 chicken breasts, sliced in half length wise to make 6 cutlets (or buy thin cut at store)
  • 3/4 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 Tablespoons butter, melted or olive oil
  • 1 cup shredded mozzarella
  • cooking spray
  • jarred marinara
  • 1 package zucchini noodles or 4 zucchini cut into noodles with a spiralizer

Instructions

  1. Preheat oven to 425 degrees. Spray large baking dish or cookie sheet with cooking spray.

  2. In a shallow bowl or plate combine panko bread crumbs, parmesan cheese, garlic powder, Italian seasoning, salt and pepper. 

  3. Brush melted butter on both sides of chicken breasts

  4. Dip each piece of chicken into breadcrumb mixture making sure to cover the  entire surface with crumbs. 

  5. Place coated chicken on baking sheet/dish and spray with a light coating of cooking spray.  Place in oven and bake 20-25 minutes or until cooked through and lightly golden. 

  6. Remove from oven and place a large spoonful of sauce on top of each chicken breast and top with a handful of mozzarella.  Place back in the oven for 5 minute or until cheese is melted. 

  7. Serve over zucchini noodles or pasta 

Recipe Notes

You can serve the zucchini noodles raw, but I like to heat a small amount of olive oil in a skillet and quickly saute with a sprinkle of salt and pepper.
