It’s Sunday and I don’t know about you, but I am tired from the weekend. During the holiday season I feel like the weekends are a lot of work-I mean going from party to party and charity event to kids activities and dropping of neighbor gifts and just trying to be everywhere and be sparkly and cheery-its a lot of work:) Don’t get me wrong I am SO grateful to be invited to parties and honored that people still want us around, but every weekend in December is packed full. I love it, but by Sunday night I am DONE and the last thing I want to do is get in the kitchen! BUT, this dang family still needs to eat and you know how I feel about take out so here is a VERY LAZY dinner-Lemon and Herb Roasted Chicken Drumsticks. Serve these with a side of Trader Joes mashed potatoes, a side salad (from a bag) and dinner is DONE. Or these are perfect to serve at a football bowl game party or to a huge group of hungry teenage boys!
This “recipe” is just a guideline so feel free to make it your own. If you like things spicy then add 1/4 teaspoon of cayenne to the mix or if you don’t have Italian Seasoning then use whatever dried herbs you have in your spice drawer (thyme, rosemary, oregano…). DO NOT make a special trip to the gates of hell (the grocery store is SO crowded this time of year I try to avoid on the weekends or go at like 8am) to get Italian Seasoning.
Enjoy and try to take a few minutes this holiday season to just sit back and have a casual family dinner. Your kids will remember the quiet dinners!
Lemon and Herb Roasted Chicken Drumsticks
Marinated chicken drumsticks make a super easy dinner or game watching snack. Big kids and little kids will love these!
Ingredients
- 3 lb chicken drumsticks
- 1/2 cup olive oil
- 1 large lemon, juiced (about 1/4 cup juice)
- 2 teaspoons minced garlic
- 1 teaspoon onion powder
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 2 teaspoons Italian seasoning (or mixture of dried herbs such as rosemary, oregano, thyme...)
- 2 Tablespoons fresh parsley, chopped
- cooking spray
Instructions

In a large bowl combine oil, lemon juice, garlic, onion powder, salt, pepper and Italian seasoning. Add drumsticks and toss well.

Cover and refrigerate for at least 2 hours or up to 8 hours (longer than that and the lemon juice will begin to make the meat tough).

Preheat oven to 400 degrees.

Place marinated drumsticks in a single layer on a foil lined baking sheet sprayed with cooking spray.

Roast for 25-35 minutes or until cooked though (165 internal temperature)

Sprinkle with parsley and a squeeze of lemon juice and serve.
Recipe Notes
DO NOT use a metal bowl to marinate the chicken. The metal will react with the acid in the lemon and give the meat a metallic taste. Use plastic or glass.
