If you are looking for an EASY, QUICK, dinner/lunch this is it! Easy Chicken Pozole Verde is so delicious and perfect during the cold winter or the hot summer. It is a bit tangy with a tiny bit of heat (you can always add more) and it is filling and comforting. Its just so good!
I have dumbed this recipe down so it can literally be made in about 20 minutes and I promise you will not know it did not take all day to make. Sometimes, most of the time, I just don’t have all day to make soup.
You know I looked and looked for years for a good, quick pozole and every recipe I came across had me making the tomatillo sauce from scratch, which is fabulous, but why waste all that time? Plus finding tomatillos can be hard sometimes. They are the green looking tomatoes that have thin husk on them. I am sure you have seen them in the grocery and wondered, “what the heck am I to do with those?”. Well, they are fabulous and make great salsas and Pozole, but if I can cut out a step I’m gonna cut out a step. As long as it does not compromise the flavor. I promise you will not tell the difference.
So, how do I make it simple and easy? I use jarred verde salsa! It’s the exact same thing that all the recipes call for when they say to boil the tomatillos with onion, garlic, cilantro, jalapeños….. for 40 minutes to an hour then blend in a blender. DON’T HAVE TIME FOR THAT!!!
I use the Trader Joes Salsa Verde, but if you don’t have a Tjs near you then use any salsa verde you can find. I like the New Canaan Farms Verde Chili Verde also, but really any brand you like will work. And notice the heat level on the TJs. It is very mild so adjust the heat as you prefer.
This soup also calls for hominy. It is one of my favorite “vegetables”. I have a delicious hominy casserole liked here. I grew up eating hominy at all family gatherings. Maybe that is why I love this soup so much. It is an excuse to eat hominy, lol!
I also use rotisserie chicken to speed this process up, duh! Why boil or roast the chicken if you can have it done for you? I buy one large rotisserie and just shred the meat. YUM!

Easy Chicken Pozole Verde
A super easy, quick and filling soup that is perfect in all seasons!
Ingredients
- 1 Tablespoon olive oil
- 1 small onion, chopped
- 1 large rotisserie chicken, shredded (skin removed)
- 1 (28 oz) can white hominy, drained
- 6 cups chicken broth/stock (about 1 1/2 boxes)
- 1 (12-16oz) jar salsa verde
- garnish with lime, thinly sliced radish, cilantro, sliced jalapeños, slice avocado
Instructions

In a large pot, heat oil over medium high heat. Add onion and saute until soft, about 5 minutes.

Add shredded chicken, hominy, chicken broth and whole jar of salsa. Allow to come to a simmer. Let simmer for about 15 minutes for the flavors to meld, but it can sit on the stove for a couple hours on low.

Season with salt and pepper.

Serve with sliced radishes, lime wedges, chopped cilantro, sliced jalapeño and avocado.
Recipe Notes
- If you like it spicier then you can add chopped jalapeños to the pot when you are sautéing the onion. Just remember the heat is in the seeds so use sparingly.
