My family does not eat a lot of desserts, but there are a few that they cannot resist and Apple Crisp is one of them. We are lucky because now days we can get fabulous apples all year round, but they are especially good in the fall. Of course my family’s favorite apple is the Honeycrisp and they are the most expensive down here in Texas, but I buy them at Costco (yes angels are singing) and I can get 16 in a bunch! We eat a lot of apples!
So, what to do with all these apples? I serve them for after school snacks with cheese or put them in salads or bake them with cinnamon or make apple crisps! This apple crisp recipe is super easy and this is a great dessert to take to a pot luck or a holiday dinner because you can serve it at room temperature or heat it up with ice cream-either way it is delicious!
The hardest part of this recipe is peeling the apples, seriously it is very easy to throw together. Use a tart/firm apple such as Granny Smith or Honeycrisp so it holds up to the cooking and off sets the sweetness of the filling.
As always I have linked items that I used to make this recipe. I did not use the apple peeler-I just used a regular vegetable peeler, but I have use an apple peeler and it is nice! It is not expensive, but it does take up kitchen real estate (where the hell am I going to store ANOTHER gadget).

Apple Crisp
Makes 6-8 Servings
Crumb Topping:
1/2 cup flour
1/2 cup old fashioned oats (don't use instant or they will be mushy)
1/2 brown sugar
1/4 teaspoon cinnamon
Pinch of salt
1/2 stick of butter cut into small chunks
Filling:
3 large Honeycrisp apples or Granny Smith apples, peeled and sliced thin (if you can't find the large apples then use 4)
4 Tablespoons butter melted
2 Tablespoons flour
1 Tablespoon lemon juice
1/2 teaspoon vanilla extract
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
Serving Suggestion: Vanilla Ice cream
Preheat oven to 375°
Topping:
In a medium bowl combine all the crumb topping ingredients together and use a fork to blend the butter into the mixture.
Filling:
In a large bowl, combine melted butter, flour, lemon juice, vanilla extract, brown sugar, cinnamon, salt and nutmeg. Food sliced apples into butter mixture and coat evenly.
Pour apple mixture into an 8x8 serving dish. Sprinkle topping mixture over apples.
Bake for 30 minutes or until bubbly and the topping mixture is browned and crisp.
Remove from oven and allow to cool slightly. Serve with a scoop of vanilla ice cream.
