Cauliflower Mash
Makes about 4-6 servings
1 large head of cauliflower, chopped
1 teaspoon salt
1/4 cup milk
1 Tablespoon olive oil
1 small garlic clove, minced
parsley for garnish
salt and pepper to taste
Bring a large pot of water to a boil. Add 1 teaspoon salt and cauliflower. Boil for 10 minutes or until the cauliflower is very tender.
Drain in a colander.
Transfer cauliflower to a food processor or blender. Add milk, oil and garlic. Blend until smooth.
Taste for salt and pepper and garnish with parsley.
Serve warm.
Notes:
* You might need to add more milk depending on how big your head of cauliflower is and how much water it absorbed during the cooking process.
