Grilled Caesar Salad
4 Romaine bunches, cut in half lengthwise
Olive oil
Homemade croutons (recipe to follow)
Parmesan Cheese, grated or shredded
Caesar Salad dressing (recipe in salad section)
Heat the grill to medium high. Or if you don't have a grill or it's snowing (up in those Northern states:)), use can use a grill pan.
Drizzle romaine halves in olive oil. Place flat side down on grill for 1-2 minutes. Just until you see grill marks.
Serve with croutons, Parmesan cheese and dressing (follows in blog)
** Homemade croutons (I forgot to take a picture so I will soon), but here is the "recipe"
Preheat oven to 350°
1/2 loaf of bread or old sliced bread or left over baguette.
Cut into cubes and toss into a small bowl.
Drizzle with Olive oil (enough to coat, but not enough to make the bread soggy)
Sprinkle with salt and pepper
Spread cubes onto a foil lined baking sheet in a single layer
Bake for 10-12 minutes or until golden
