Apricot Bacon Bites
Makes 30 Pieces
4oz. goat cheese, let come to room temperature
1 Tablespoon fresh rosemary, chopped
30 apricots
10 slices thin cut bacon, cut into thirds
toothpicks
Preheat oven to 350°
In a small bowl, mix together the goat cheese and rosemary.
Cut a slit in each apricot. Stuff a small amount of the cheese mixture into each apricot. Wrap a piece of bacon around and secure with a toothpick.
Place wrapped apricots onto a foil lined baking sheet.
Bake 15 minutes. Turn the apricots over and bake an additional 15 minutes.
Notes:
* Each oven is different so pay attention not to burn the bacon.
* Do not stuff the apricots too full or the cheese will drip out during baking.
