This recipe has been in the family for years. I dont remember a Christmas without it.
Preheat oven to 350 degrees
In a mediium sized bowl, beat egg whites with an electric hand mixer until stiff peaks form.
Fold sugar and vanilla into beaten egg whites
In a separate bowl, combine baking powder, pecans and crackers.
Fold egg mixure into cracker/nut mixture. Mix well
Grease pie pan with butter or cooking spray.
Pour pie mixture into prepared pie pan and spread with a spatula until even.
Bake for 20-25 minutes or until it is golden and looks like the texture of a cookie.
Cool completely.
Top with a thick layer of Cool Whip and arrange Mandarin Oranges on top. About 1-2 per slice.
