Preheat oven to 425 degrees. Line a baking sheet with foil and spray with cooking spray.
Lay stalks on the baking sheet. Drizzle with oil, sprinkle garlic, salt and pepper. Using your hands toss the spears so they are covered in the oil mixture. Lay them in a single layer.
Roast for 5 minutes or until just barely tender.
Turn the oven to broil. Remove from oven and top with mozzarella and Parmesan cheese. Place back in oven under broiler for 3-4 minutes or until the cheese melts and begins to turn golden.
Serve immediately.
