Perfect dip for a tailgate or to take to a football watching party!
Preheat oven to 350 degrees. Spray a small baking dish with cooking spray and set aside.
In a large bowl, combine corn, Rotel tomatoes/chilies, jalapenos, cream cheese, sour cream, 3/4 cup Monterey Jack cheese, chili powder, garlic powder, cumin, salt. Mix well.
Pour mixture into baking dish. Top with remaining cheese. Bake for 30 minutes or until bubbly. Serve with chips.
If you do not want it spicy just omit the jalapenos or only put in half the can (2oz).
