Juicy chicken tossed with peppers, onions, fajita seasoning, topped with cheese and baked in one quick and easy dish!
Preheat oven to 400 degrees.
Lightly grease a 9"x13" baking dish.
In a large bowl combine seasonings (cumin, chili powder, garlic powder, salt, pepper and cayenne if you are using). Remove 1 teaspoon of seasoning and reserve for later. Add chicken to bowl and toss until all chicken is covered in seasoning.
Place chicken into prepared baking dish and cover with peppers and onions. Sprinkle remaining seasoning over top of vegetables.
Drizzle with oil and lime juice. Cover with foil and bake for 30-35 minutes or until chicken is no longer pink. If you use less chicken it will take less time to cook through (the dish will not be as crowded).
Remove from oven and top with cheese. Turn oven to broil. Place back in oven with foil off and broil an additional 3 minutes or until cheese is melted. Watch to make sure it does not burn.
Serve with tortillas.
