Quick, Easy, Comforting and Delicious skillet taco.
In a large skillet with a lid, heat oil over medium-high heat. Add the onion, red bell pepper, poblano and jalapeño. Cook until softened, about 5 minutes.
Add ground meat and cook until no pink remains, about 10 minutes.
Add taco seasoning packet or 2 Tablespoons homemade seasoning. Stir to combine. Add 1/2 cup water.
Add tomatoes, corn and beans. Bring to simmer until liquid is reduced.
Sprinkle cheese over beef mixture. Over with lid and turn the heat off. Let sit for about 5-10 minutes until the cheese is melted.
Garnish with avocado and scallions. Serve with shredded lettuce for a low carb salad or serve with tortilla chips.
