1 lb. ground turkey (you can use up to 1 1/2 lb. with this same recipe if you need to feed more)
1 egg
1/4 cup ketchup
1 Tablespoon Worcestershire sauce
1/3 cup breadcrumbs
2 Tablespoons parsley, chopped
Salt and pepper
For Sauce:
1/4 cup plus 2 Tablespoons ketchup
2 teaspoons soy sauce
1 teaspoon Worcestershire
Preheat oven to 375°
Line a cookie sheet with foil and set aside.
In small skillet heat oil over medium-high heat. Add carrots and onions and saute until soft, about 5 minutes. Add garlic and turn off heat. Allow to cool slightly.
In a large bowl, combine turkey, egg, ketchup, Worcestershire sauce, bread crumbs, parsley, carrot and onion mixture and pinch of salt and pepper. Mix well, but do not over mix.
In a small bowl, combine ingredients for sauce. Set aside.
Form the meat mixture into a loaf on the prepared baking sheet. Spread a few Tablespoons of sauce over the meatloaf.
Bake in the oven for 40-45 minutes or until an instant read thermometer reads 160°. Let rest about 5 minutes before slicing.
In a small saucepan heat remaining sauce or you can heat in the microwave. Serve sauce alongside meatloaf.
