Zucchini Noodles with Parmesan
Makes about 4 servings
4 medium zucchini or 1 package of s
piralized zucchini noodles
2 Tablespoons butter
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
Cut the zucchini into noodles using a vegetable spiralizer if not using precut zucchini.
In a large skillet over medium heat, melt butter. Add garlic and red pepper flakes and cook about 30 seconds. Add noodles for about 3 minutes. Do not over cook or the zucchini will be come mushy.
Toss cooked zucchini with parmesan and season with salt.
* Zucchini noodles cook very fast
