1 cup shredded cheddar cheese (save a tablespoon for garnish)
3-4 slices cooked bacon, chopped
2 green onions, chopped
2 Tablespoons sour cream
1/4 cup milk
1/2 teaspoon black pepper
Preheat oven to 300°
In a large mixing bowl, combine all ingredients and taste for seasoning. Depending on the brand of potatoes you use you might or might not need salt.
Spray an 8x8 baking dish with cooking spray. Spread the potato mixture into the dish. Sprinkle remaining cheese on top and bake until heated through-about 20 minutes.
Notes:
* If you want to make your own mashed potatoes you will need 1-2lb. of Russet potatoes to make 4-6 servings.
