Lemon Baked Cod
1 lb. center cut cod fillets, cut into portion sizes and skinned
1 stick of butter, melted
1 lemon, juiced
Salt and pepper
1/2 cup flour
Parsley, chopped for garnish
Preheat oven to 350Â°
In a shallow bowl, microwave butter until melted then add lemon juice.
In another shallow bowl, add flour.
Salt and pepper fillets. Dip each piece in the butter/lemon mixture and then in the flour. You do not want a ton of flour on each piece just enough to lightly coat.
Place fillets in baking dish and pour the remaining butter over top.
Bake uncovered for approximately 30 minutes until the fish flakes with a fork.
