A taco in party form! Easy to make and easy to eat at a party or tailgate!
Preheat oven to 350 degrees.
In a skillet heat oil over medium high heat. Brown meat until cooked through. Drain fat.
Add Rotel, taco seasoning and water. Allow to cook for about 5 minutes or until the water has evaporated. Turn heat off and allow to cool for about 10 minutes.
Spray muffin tin with cooking spray.
Place one wonton wrapper in each cup. Sprinkle about a tablespoon of cheese on top. Layer a second wonton wrapper on top of cheese and press down. Scoop a heaping tablespoon of meat mixture on top of wonton wrapper. Sprinkle a bit of cheese on top of meat. Repeat with all cups.
Lightly spray the tops of the wonton wrappers with cooking spray. I hold my muffin pan over my kitchen sink so I do not spray all over my kitchen floor or counters.
Place in oven for 10-12 minutes or until golden and crispy. Top with shredded lettuce, extra cheese, sour cream, green onions, jalapeños...
If you cannot find Rotel Tomatoes and Green Chilis you can use 1 can fire roasted tomatoes, drained, with 1- 4oz can of green chilies or 1-4oz can of diced jalapenos.
