Modern version of the classic old-fashioned hamburger helper.
In a large, deep, lidded skillet heat oil over medium high heat. Brown beef and onion until no longer pink. Drain.
Add taco seasoning, water, and salsa. Stir until combined.
Stir in pasta and make sure it is covered by liquid. Add more water if necessary.
Bring to a boil and cover with lid. Reduce heat to medium low and cook for 15 minutes.
Add half the cheese and stir into pasta. Add the remaining cheese on top and allow to melt.
Serve with traditional taco toppings-sour cream, avocado, pico de gallo...
