Delicious, light and healthy chicken patties are perfect served with mashed potatoes or on a whole wheat bun as a burger. A quick and easy weeknight dinner!
In a small skillet, heat 1 tablespoon olive oil over medium-high heat. Saute onion, garlic and mushrooms until soft, about 4-5 minutes. Set aside to cool sightly.
In a large bowl, combine ground chicken, bread crumbs, tarragon, salt/pepper, egg white and onion mixture. Mix well, but do not over mix or the patties will be tough.
Divide the chicken mixture into 4-6 equal parts and shape into patties.
Place flour onto a plate and dredge the patties in the flour, shaking off excess.
Heat remaining 2 tablespoons oil in a large that has skillet over medium-high heat. Add patties and cook for about 3 minutes per side. Add water and cover. Cook an additional 3-4 minutes or until cooked through. Remove patties to a plate and cover loosely with foil.
To the skillet, add the wine and scrape up the brown bits on the bottom. Let reduce about 2-3 minutes. Turn the heat off and add the butter. Swirl the butter until melted and the sauce is thickened slightly. If the sauce is too "winey" you can add 1/4 cup chicken broth or water to the sauce. Just let it thicken a bit after you add it.
Heat mashed potatoes in microwave, according to package directions, adding a little milk if too thick.
Serve patties over mashed potatoes and drizzle a bit of the sauce over top.
* Only cook with wine you would drink. When you cook with wine, or alcohol of any kind, the alcohol burns off and the flavors of the liquid concentrate so you do not want to use wine that had been opened more than a couple days or you will get an "off" taste.
*DO NOT buy the cooking wine in the vinegar section of the grocery store.
*I normally find the pre-made mashed potatoes in the produce section or under the rotisserie chickens. If you cannot find them in those sections then go to the freezer section and they almost always have frozen mashed potatoes.
