1/2 teaspoon red pepper flakes (more or less depending on how spicy you like it)
1/4 teaspoon salt
1/4 teaspoon black pepper
5oz fully cooked sausage (such as Jimmy Dean fully cooked turkey sausage crumbles)
1/4 cup red bell pepper, minced
1/4 cup pepper jack cheese, grated
Preheat oven to 350°
Spray a non-stick muffin tin with cooking spray.
In a large bowl, whisk eggs, milk, cheddar cheese, salt, pepper and red pepper flakes until fluffy.
Place a tortilla half in each muffin mold twisting so the tortilla creates a bowl.
Pour the egg mixture evenly into each tortilla bowl about 1/2 way full. Place a small amount of sausage and red bell pepper in each bowl. Top with pepper jack cheese.
Place in oven and cook uncovered for 20-25 minutes or until the eggs are cooked through. If the tortilla edges begin to brown too much you can cover with foil, but be sure and spray the foil with cooking spray so it doesn't stick to the cheese.
